A Brief History of a Curtain Call

The Curtain Call is a sophisticated cocktail that harmoniously blends herbal, citrus, and effervescent notes. Its flavour profile highlights the crispness of white rum, the aromatic freshness of basil, and the tartness of lemon juice — all elevated by the bittersweet complexity of a red bitter liqueur and the celebratory fizz of sparkling wine. The result is a refreshing and layered drink, perfect for special occasions.

Created by Arash Ghassemi, the Curtain Call was the winning cocktail entry at the 2016 Bacardi Legacy Competition, showcasing both elegance and creative craftsmanship in a glass. It's said that the Curtain Call is dedicated to all the guests - often thought, yet not said, "thank you". 

Taste and Flavour Profile

The Curtain Call offers a symphony of flavours. Charcoal filtered rum takes centre stage, with its rich, tropical notes complemented by the brightness of fresh citrus juice and the complexity of an Italian red bitter liqueur. The unexpected addition of olive brine introduces a subtle umami undertone, making this cocktail uniquely layered and memorable.

The Curtain Call's vibrant and complex profile pairs well with:

  • Appetisers: Bruschetta topped with fresh tomatoes and basil, or a citrus-infused ceviche.

  • Main Courses: Grilled seafood dishes, such as shrimp or scallops, which complement the cocktail's refreshing notes.

Bar Equipment

  • Cocktail shaker
  • Mexican elbow
  • Muddler
  • Jigger
  • Hawthorne strainer & fine sieve 
  • Coupe glass

Ingredients

  • 40ml Rum - 3yr old charcoal filtered
  • 20ml Freshly squeezed lemon juice
  • 15ml Simple syrup*
  • 10ml Campari or similar Italian red bitters
  • 3 x basil leaves
  • Black olive brine
  • 30ml Prosecco - Brut
  • Garnish with skewered black olive

Method

  • Rinse the coupe glass with olive brine
  • Add the ingredients except the Prosecco into a cocktail shaker and gently muddle, add ice and shake until cooled
  • Double strain into the coupe glass and top with Prosecco
  • Garnish with a skewered black olive 

*Simple syrup - 1 part sugar to one part water. Gently heat in a pan until sugar has dissolved and allow to cool
